Live cooking or tasting means water, power, heat, extraction and surfaces that can be wiped down all day. It also means health rules. A counter that looks right and cannot be cleaned is a failed counter — tell us at the quote stage if food is being served.
The show runs Saturday to Tuesday. Four days of traffic is hard on edges, corners and anything at knee height. We build the parts that get knocked differently from the parts that get looked at.
Unlike the March shows, freight into Chicago in May is straightforward. That removes one variable from a build that already has plenty — and it makes a late change far less frightening.
